"Citrus and spice: flavours that always come to life when we near the colder winter seasons of November and December with the year drawing to an end. For me, mandarins and ginger are stand out flavours at this time of the year and for sure bring a taste of nostalgia and many happy memories: from receiving a mandarin in my stocking every Christmas to baking, building and decorating countless gingerbread houses or ginger bread people with my mum every year (some successful and some not…but all super yum in the end!). But you know what makes these flavours even better? Pairing them with chocolate. Then putting them in one of my favourite snacks: scones.
These easy-peasy scones are super simple to make with only four ingredients! But they taste super delicious and indulgent. Have them hot or cold, for snack or dessert, plain or topped with fresh fruit and cream. Soft, cakey & full of flavour. I really hope you enjoy them!"
- 3 ¾ cups Self Raising Flour
- 250 ml Lemonade
- 150 ml Single Soya Cream (Vegan Single Cream Alternative)
- 100g Sweet Mandarin & Ginger Chocolate
- Mashed Mandarins and Grated Chocolate (see photo)
- Chocolate Spread or melted chocolate
- Marmalade or citrus jam
- Preheat the oven to 165 degrees Celsius fan.
- Lightly sprinkle a dusting of flour on two large flat trays.
- With a sharp knife, chop the Sweet Mandarin & Ginger Chocolate into varying side chunks: big, small & medium!
- Add the self raising flour to a large mixing bowl, add in the chocolate & mix together.
- Create a well in the middle of the dry ingredients, pour in the single cream alternative, followed by the lemonade gradually.
- Mix and fold in well until a scone dough is formed that is soft to touch, but not too sticky. (If the dough remains too sticky, add flour in small amounts till it becomes just right). A combination of mixing with a spoon, followed by light needing works best for this step.
- Once ready, lightly flour your work surface or a chopping board and rolling pin, then gently roll out the dough to about 2 cm thickness.
- Take your scone cutter, cut out your scones & place them spread out on the trays ready for baking.
- Stick the scones in your preheated oven for 20-25 minutes. These scones do not brown up as much as traditional scones: they will remain quite pale in colour with a slight golden hint but when tapped on the base will feel sturdy to touch.
- When done, take them out, be careful not to burn your fingers, let cool & enjoy!
