Mint Chocolate Cookie Cakes

Not sure if you fancy a cookie or a cake? Well let's combine the two and make it minty.

INGREDIENTS:
  • 1/2 cup butter
  • 1 &1/3 cups self raising flour
  • 1/3 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1/2tsp baking powder
  • 2tsp vanilla extract
  • 3tbsp soya milk
  • 1 bar Seed and Mean Mint Dark Chocolate

METHOD:
  • Pre heat oven to 180° and line tray with baking paper
  • In a bowl mix the butter, granulated sugar, brown sugar
  • Add vanilla extract and soya milk, mix
  • Add the flour and baking powder, mix well
  • Chop up 1/3 of the mint chocolate bar and leave the rest for later
  • Add the chopped chocolate to the mixture and combine
  • Take roughly 1tbsp batter and roll into balls and place onto the baking sheet. The mixture will be sticky so it may be easier to put the tbsp mixture onto the sheet and mould into shape with your fingers
  • This should make approximately 10 cookie cakes
  • Bake in the oven for 15 minutes
  • Once baked place on cooling rack to cool
  • Melt the remainder of the chocolate
  • Once cooled dip each cookie cake in the melted chocolate and put in the fridge for 10 minutes to harden then enjoy.
